The fruit for this 100% single-parcel Godello comes from O Taboleiro, a south-facing vineyard with sandy, granitic soils. The fruit is hand-harvested and fermented at low temperature in stainless steel vats using indigenous, wild yeasts. After maturing in tanks the wine is bottled on a Flower Day in May according to the biodynamic calendar, and rests in bottle for at least a month before release.
The 'X' comes from exceptional vineyards, as they believe that this is a very distinct Godello, apart from others, from an iconic parcel of Gomariz.
