Taleggio is a soft, pungent, washed rind cheese from Italy. The squares of pasteurized cow's milk are washed with a brine to create a sticky, orange edible rind while air pumped from the original caves causes a soft and earthy tasting grey mold. The result is a creamy, nutty, mushroomy interior with a pudding texture. Just funky enough. Smear on crusty bread with a drizzle of honey. Pairs well with farmhouse ales, Pinot Noir, and Rose.
