A pale yellow in glass with aromas of fresh cut hay, apples, and citrus. A brisk acidity keeps the wine lively and is signature of this mountain grown fruit. A long finish with brioche and citrus.
The vineyard is tucked away in the Santa Cruz Mountains amongst the oaks and redwoods. Dry farmed, organic, no till and the vines thrive! A true testament that this is a good site for grapes.
The fruit was crushed and immediately pressed. The juice was settled overnight and racked the next day selecting specific solids to keep. Just at the onset of native fermentation the juice is put into barrique for barrel fermentation. This wine had a long fermentation and only finished the following spring. Kept sur lie for ~10 months, racked once and bottled unfined & unfiltered.
