A classic cheese from Switzerland, Gruyere has a natural, rusty brown rind with a hard, dry interior that pitted with tiny holes. Slightly grainy, the cheese has a wonderful complexity of flavors - at first fruity, and then more earthy and nutty. Gruyere is a great addition to grilled cheese, fondue, and mac and cheese. Or serve it on a cheese plate with roasted nuts and smoky charcuterie. Pair with a glass of big, rich red wine.
