Elia transformed his family’s century-old livestock farm into one of Montalcino’s most promising organic operations. They run in similar fashion to Val di Suga, managing just seven hectares in southwestern Montalcino, hand-harvested fruit, and aging their Sangiovese in large Slavonian oak barrels well beyond the legal requirements.
