A young Manchego cheese made in Spain from pasteurized sheep's milk. The distinctive criss-cross pattern on the rind points to the traditional use of grass belts to shape fresh curd. This younger, pasteurized selection is great for melting and perfect for parties, we recommended serving with fig and almond cake. Pair with Spanish red wines like Tempranillo or lagers and ciders.
