Mimolette looks like a dusty moonrock on the outside with a bright, electric-orange paste in the middle. The appearance and floral aroma of the rind is the work of tiny mites, that the French call tiny affineurs for their important role in the aging process. But don't let that deter you from trying this unique cheese (plus the bugs are wiped off before the wheels get imported into the US). This orange cheese has notes of caramel and butterscotch with a smooth, fudgy finish. Pairs well with rustic red wines.
