Dunbarton Blue is truly a special cheese, one of the staff favorites at White Horse. A hand crafted, cellar cured cheese with the earthy character of a fine English-style cheddar, coupled with the subtle hint of blue flavor. The cheesemaker presses the cheese to inhibit mold growth, creating a blue-veined cheddar that is potent yet approachable. Made with pasteurized cows milk in Wisconsin and aged at least 90 days. Pair with Riesling, Bourbon, and strong, dark beers.
